
So, it’s been a while. It’s time to dust the cobwebs off the cupboards and eat. some. food!
I’m still deeply shaken over the whole hurricane issue we had up here, but here were some of my healthy comforts during the storm:

Breakfast bowl of peace prior to the storm. In there is: coconut flour, cocoa powder, almond milk, organic date granola, chocolate chips, coconut sugar, and banana.
After the storm, I was so graciously thanking god…for being able to find… eggs! It took about 5 days, but I finally feasted my eyes upon them and ran to them like it was the last drop of water on earth! (reasons why I could never be vegan)
Some more breakfast type dishes for you:

Made with crushed apples, vanilla protein powder, egg whites, 1/2 banana, almond milk, and drizzled with vanilla chobani

Ezekiel cinnamon raisin bread, almond milk, cinnamon, mashed banana for batter. Coat both sides of bread, cook for 2-6 minutes, and voila! Thank you instagram and Tara Stiles for this one!
Now comes the soups and greens parts of this week’s WIAW:
*Disclaimer: You know I’m one to make everything from scratch where I can be in control so I don’t have hidden hydrogenated oils or carageenan lurking around, but desperate times call for desperate measures. No eggs at the time meant lots of canned substitutions.

Chickpeas, butter/red leaf lettuce, sprouts, mozzarella, avocado with a drizzle of EVOO, sea salt, and vinegar over top
Now for “the goods”:

1 frozen banana, vanilla protein powder, almond milk as needed- throw all into blender, top with nutmeg
Are you full? You should be. Especially when dessert was the size of Texas.

yep, his soups actually aren’t too bad! I buy them weekly now! 🙂 the breakfast bowl consisted of: banana, coconut flour, organic date/cashew granola, cocoa powder, coconut sugar, almond milk, and topped with chocolate chips! it was so good!!!
