-Things To Try Thursdays- Sugar Cookie Banana Chia Cake

You know I have mad love for antioxidants. I could easily serenade several of my main squeezes (oranges, blueberries, spinach) with Mariah Carey’s, “Honey”. (Or just save their ears and lip sync it…)

Antioxidants are important for many reasons. The one that resonates most with me is the fact that they fight free radicals which may cause cancer later on down the line. Oh and I suppose having GREAT skin when consuming them is an added bonus! 😉

The amount of antioxidants out there even makes it accessible and appealing to the pickiest of eaters, so there’s no excuse as to why you aren’t filling up on these!

My most recent rendezvous with antioxidants has been with the ancient seed of chia. Chia has been around for eons and is one of the richest plant sources of omega-3’s. (the good fatty acids)

Since I’ve been consuming mainly plants, beans, and eggs, meeting my daily intake of omega 3’s has been challenging.

So what do you do when things like this happen?


This recipe is so super simple and easy, it hardly deserves to be called a recipe.  Half of the work is done for you by adding in the cake mix!

It looks frumpy, but trust me, tastes fabulous!

    What all is in the sugar cookie mix you used? Just wondering how a vanilla protein powder and baking powder mix would do in place of that mix. Either way, I want to make and eat this soon!

      things that I wouldn’t normally consume! I was in a pinch so I used paula deen’s sugar cookie mix…I am sure if you did some vanilla pro powder and stevia or other sweetener it would taste similar!
