
It all started with a bunch of freelance writing opportunities I garnered for myself and they all just so happened to contact me within the week…some good, others not so good. It went on to actual job opportunities and now possibly a solid two job offers!
September is really the month for change and re-hiring evidently! Here’s something you don’t usually see on my blog… I am COUNTING MY BLESSINGS. ALWAYS BE GRATEFUL. (You mean, you’re not being sarcastic?) (insert serious face emoji here.)
I have begun to feel the wrath of scheduling and time management, especially when it comes to blogging, (and I haven’t even begun any of these wonderful opps yet) some of my posts were getting pushed to the wayside.
I hate being fashionably late to most gatherings in life…mostly because I usually don’t associate myself with the word “fashionable.” I’ll tell you something I dislike even more than being fashionably late, being food-ably late! (sorry guys- that’s all you get when I’m running on empty and my head is somewhere between the Jersey Shore and Pennsylvania.)
I’m so glad some of my food choices align with Jenn’s new theme of fall and eating a bit healthier!

Olive Mushroom hummus! Yum that sounds great! Do you have recipe?
it was so good! yes- it’s pretty basic…I apologize, but I don’t measure…I threw into a food processor… almost a whole can of olives, a tiny can of mushrooms (you can use fresh ones if you prefer), 1 can chick peas, some sea salt, about 1-2 tbsp. of olive oil, and some lemon juice. Most hummus-es call for tahini or sesame but I usually never use it. Enjoy! Thanks for reading! 🙂

Nothing Fall related yet, but getting close. I use pumpkin year round, but the other squash varieties will be a welcome change! Besides some tasty baked salmon cakes I made, nothing new in my foodie world.

lol yes- it was amazeballs! I don’t think my sweet tooth will ever go away completely, but at least these were semi healthy! I don’t know how I hardly ate it before blogging, it’s in my diet every day now! Thanks for reading! I’ll have to check out your salmon cakes!
I’m constantly on a time crunch with posting on my blog. I wish I could find more time on the weekend to schedule more posts so I’m not always rushing to get them done during the week. I need to be more disciplined in my sleeping schedule now that winter is coming up.

the soup was actually an organic broccoli one from a carton! I should try reconstructing it though! yes- the pancakes were absolutely amazing! Never had any that were flour free before!
