The past few weeks have entailed whirlwind emotions, too much tidying, and of course over-eating!
My tastebuds have craved everything under the sun and at times I can strongly relate to Cookie Monster. I have begun talking with my mouth full and eating lots of cakes, cookies, and muffins. I guess if this were the 1800s where the general public was told of how opulent you were by how grand your stomach was, then I’d be bathing in cash this week.
My winter almost two-pack abdominals are now in dire need of spring cleaning. Oh well, there is always tomorrow! Carpe diem…or something like that.
Onto the food, glorious food!
Let’s start with some basics…
Salad with avocado, chickpeas, croutons, and baby butter lettuce
Osteria at Whole Foods Italiano Salad (artichokes, mixed greens, kalamata olives, roasted red peppers, onions, tomatoes, egg, red wine vinaigrette)
Something from the SHISH station at Whole Foods… (chicken kebab pieces with fattoush salad and pita bread slices)
Oh…and MORE Whole Foods…
I had a poor man’s meal (or at least what my Italian grandparent’s used to consider a poor man’s meal) Egg with brown rice pasta and roasted vegetable gravy
Speaking of eggs, these proved to be an excellent cure for a hangover. There are bits of avocado, scallions, and monterey jack cheese inside!
This was what caused the hangover…
I made apple butter balsamic chicken and had vats of it this week…
Yummy homemade cocoa oats with flax and PB!
Eggplant fries seasoned with garlic powder, vinegar, lemon, and olive oil. (I leave the skins on for more nutrition! Still taste just as good!)

What do you eat when you’re stressed? Do you plan ahead if you know you’ll be under a certain amount of pressure during certain weeks? I need to start doing that to spend less money!
