*Inspired by Wellness Mama’s post last week, I decided to take a stab at the whole eggs ‘n’ oats breakfast. (An “oatlet”)…Variety is the spice of life, right?
Ok, so I am always substituting and fine-tuning recipes to make them my own. For this one, I did not have any almond butter around, so I used sunflower seed butter (Trader Joe’s), blueberries were added in for my fruit serving, and I used PAM cooking spray. For the oats part, I used McCann’s Steel Cut.
Ingredients & Measurements:
1 large spoonful of oats
3 seconds of egg whites pouring
1 drop of vanilla extract
5-10 chocolate chips
1/2 large spoonful of sunflower seed butter
Mix together in a small bowl. Pour into pan. (Can make them into scrambled as well. I chose omelets instead.) Cook for 3-4 minutes on low heat and voila! Your heart will be rocking out to its own version of greatest hits.
I had a stare down with this meal before I ate it. I’ll be honest the smell was pretty bizarre, but when I took my first bite, my tastebuds were in pure Dopamine bliss. It’s a mixture of salty and sweet. You actually barely taste the eggs.
