Carrot Cake Protein Mug Cake

Sorry about all of these choppy hiatuses I’ve been taking from blogging unannounced. My main focuses right now are wellness and health related: school and the gym primarily with some work on the side…

I wish I could use the white smoke thing for days when I'm actually interested in speaking/interacting with the general public.

As of right now, you can officially count this as the “white smoke” of my blog…meaning I’m back…for a quick check in to tell you that I am the REAL POPE and to fill your stomachs with another orgasmic yet healthy recipe.

You know how much I adore mug cakes, right? These little babies I could literally grow old with. (They knock the old lady with 2500 cats portrayal completely out of the park…)

The options for these are always endless and their convenience make me question why more people don’t turn to these instead of McChemicals in the morning.

I chose to create this one using carrots as I had a surplus on hand.

Ingredients:

-2 carrots
-1 tbsp. coconut flour
-1 egg
-1/2 scoop GNC Lean Shake (Orange Cream)
-handful of oats
-1/4 cup almond coconut milk
-pinch of baking powder

I basically threw all of this into the Vitamix, heated in the microwave for approximately 4 minutes and out came deliciousness.

Topped with nutmeg and cinnamon with a side of banana for presentation

**I would say you MUST remember to spray your mug with some kind of non-stick, ANTI GMO cooking spray to ensure the proper transfer from mug to plate without any disasters.**
