Hot Chocolate Protein Pancakes

Is it just me or are we hearing “historic”, “record breaking”, and “storm of the century” a bit too often these days?

I have no qualms about it since I’m a weather aficionado, but the media is completely abusing the terms. Boston and NYC have dealt with worse storms than this.

Moving onto things that make you warm and fuzzy…

hot chocolate anyone?

okay, now, let’s take it a step further…hot chocolate pancakes anyone? with an added dose of protein?

Yes?

Thought so.

These babies were constructed out of thin air yesterday morning. Work makes me feel like I’ve been on Ambien for days so any days off I have is spent lazing around, baking, blogging, or sleeping. (a.k.a. not so productive)

I had enough brain cells to make something taste good and it still manages to be nutritious as well.

Ingredients:

  • 1 banana
  • rolled oats
  • 1 scoop vanilla protein powder
  • 3/4 cup hot chocolate mix (I used Green & Black’s organic)
  • egg whites
  • dash of silk almond milk
  • walnuts, almond butter, smart balance butter for topping

Basically add in everything but the toppings into a blender and then pour into a pan. It made about three large pancakes or I would guess could also make six to eight minis if you so desire.

      they were fabulous! only thing I’d recommend is if you aren’t into the protein-y taste, put some added sugar into it. I thought they were great without, but I know some people like it a bit sweeter.
