Mug cakes…they are the new Wheaties of the early morning breakfast hour, are they not?
They seem to fill my yearning for sweet while still managing to be somewhat healthy and filling all at once. The first taste is almost so good that I need to cry…a good, healthy cry. It’s very similar to how I feel at the end of The Notebook. (despite the dried remnants of tears)
Even though I haven’t mastered the art of photographing this nutritionally delicious blob, it’s still worthy of a share.
- peanut flour
- Green & Black’s organic hot chocolate mix
- 4 strawberries
- coconut sugar
- baking powder
- 1 egg
Simply blend all ingredients together, grease a mug, and place in microwave for about 4 minutes or until cake like. Pour out onto a plate and serve!
I garnished this with some coconut sugar and a strawberry, but you can use whatever you like to top it with!
