#WIAW- The Land of All Things Mini


I think I was about 5 when I had my first real Hello Kitty memory. It was a tiny HK set of markers with a tiny journal to match. I loved it because I was able to grasp the markers, write, and color (or try to) at the same time.

It’s no secret I’m a lover of all things mini. My kitchen utensils are all…you guessed it…MINI!

I may be grown up, but I can still have all the fun I want with these incredibly cute gadgets.

Recently, I’ve been putting my Babycakes cupcake maker to GREAT use. This appliance is probably going to need some paid time off as I’ve been working it into overtime nearly every day.

If you aren’t familiar, the cupcake maker was made by Babycakes, a famous vegan bakery in NYC (and now LA).

They have an entire line of all things mini out…including even a mini chocolate fondue set! (Obviously, this is so necessary!)

So let’s start off with the first creation worthy of a mention…

Sugar Cookie Apple Muffins

Yes these were made with the orchard fresh apples I had picked about a month back. I’m seriously going to be depressed in another two days because I’m down to the last two of the bunch. πŸ™

Vanilla Protein Pumpkin Mini Muffins

These debuted on the blog yesterday. SO GOOD!

Mini Egg, Mozzarella, Onion, & Pepper Muffins

Um can you say yes? I consumed all eight in under 10 seconds flat!

I didn’t drown myself in just the above…I had to become human and myself again by chowing some greens down…

Not your typical diner food...all you have to do is ask people and you shall receive...VEGGIES!

Onto some sweeter things…

If you know me well, you know I honestly despise most “fast food” restaurants. Panera included. I used to fiend off of them in college, but I honestly cannot stand the taste of most dishes in that place. Plus- nearly every one I have ever gone into has a serious body odor and fly problem. GROSS. Okay, enough bashing…this oatmeal was actually quite splendid! Worth the extra calories!

This was one of those “well, let’s make do with what we have in the fridge” kind of side dish days…

Steamed apples and carrots...yeah it's weird, but GOOD!

And the side dish added to the main dish…eggs, of course!

Oh yes, this dessert is making a comeback…

Last but not least…PUMPKIN!!!!! Want to know something? Up until last year, I HATED PUMPKIN. Now, I eat it straight from the can.

Pumpkin, ginger, cinnamon, nutmeg, plain chobani, and peanut flour...FTW!
