Flourless Pumpkin Banana Pancakes

“Make you banana pancakes, pretend like it’s the weekend…”Β 

Oh my bad…didn’t see you reading there. Anyone else feel like Labor Day Weekend wasn’t long enough? I kind of need to make an e-card that says, “I don’t work on days that end in y,” because that’s completely my mood right now.

Laziness aside, If you’ve been following me on youtube, then you know my brief dabbling into the world of paleo has been waging war on my stomach. I’m not accustomed to meat, so it’s been a pretty intense challenge. I decided instead to focus on eliminating some of the dairy/grains/caffeine from my diet. So far, so good!

I wanted to call your attention to these 4 ingredient pancakes I made last week while trying to put my best grain-free face forward.

I don’t plan my meals out. I only did that while on Weight Watchers and during the beginning of my weight loss journey, so re-planning again was pretty daunting.

These actually weren’t written in my first week plan of paleo meals, but they pleased the palate and the requirements for a paleo diet, so win-win!

Flourless Pumpkin Banana Pancakes

Ingredients: (If you know me well, you know I eyeball. Measuring cup? What’s that?)

-pumpkin
-1 1/2 ripe bananas
-2 eggs
-cinnamon (optional)

Blend or mix well and pour into pan.

These literally took me about 15 minutes to make and yielded about 9 fist-sized pancakes. Kept me full for about 3.5 hours- so just as trustworthy and nutritious as my usual go-to of Chobani with PB!

Non-paleo disclaimer: I also added some shredded coconut over top with a small handful of Love Grown Foods Apple Walnut granola for an extra mouth watering bonus.

  4. These sound really good! Was the banana flavor really strong? I only ask because my fiance doesn’t like bananas and I would love to sneak these in one day. πŸ™‚

      it was- but maybe you could scale back to just 1/2 or add a little more pumpkin. I happen to LOVE bananas- so the more the merrier lol

  5. I’ve tried a few flour less things and still do. I actually make something similar to your recipe, but protein and peanut powder is used. Guess Paleo people would frown on the peanut powder….whatev

    I’m trying to change my foods ( not exclude groups) due to my unhappy stomach too; not much luck yet, and I sure miss Chobani!

  9. I have to mention that I love Jack Johnson πŸ™‚ Now I’m always going to think of your flourless banana pancakes every time I hear his song. I think you did that on purpose! LOL
    I wouldn’t be able to last…I like my grains and dairy too much!

      πŸ˜‰ you know me too well! haha yeah, I know what you mean…I’m kind of dying over here too, but definitely getting in at least a serving of one or the other per day so I don’t go on a wild binge!

      Yes absolutely! You could use anything you’d like…maybe those coconut flakes you just got? I’m sure the possibilities are endless!

    These did not work out very well for me. The shape did not hold up in the pan when I went to flip them. They just turned to mush. I ended up just dumping the entire batch into the pan and cooking it like scrambled eggs (I’m pregnant so time was of the essence when it came to a back up plan!) The flavor was delicious, just wish they could have been pancakes. Any tips?

      Oh no, I am so sorry to hear this!! It probably doesn’t help that I didn’t have proper measurements for you! Either let the batter sit for 20 minutes (I know that’s asking a lot), or make it the night before. It may hold up a little better. I know with my stove, it takes about 10 minutes to heat, so I wait about 10-15 minutes to put the batter on. I cook them about 5-6 minutes each side, then flip. You could also add in some baking powder or even another egg if that doesn’t work. Sorry this didn’t work out for you as planned. πŸ™ At least you liked the flavor!

    Super excited to try these babies out tomorrow morning! Just when I thought I’d given up pancakes for good as a result of going GF, I not only find pancakes, but PUMPKIN pancakes! I get the “Wild Wild West” no measuring cup thing, but can you give me somewhat of an idea? Are we talking closer to 2 tablespoons or 2 cups?

      for the pumpkin I put in closer to 3/4 of a cup. I taste tested to make sure there was equal banana to pumpkin flavor. Let me know how they turn out for you! thanks for reading πŸ™‚
