Happy “unofficial” start to summer! I’m sure most of us felt as though it was the official start as the thermometer indicated a whopping 92 degrees most of the weekend! Fine by me…I should have been born an island baby! My hair would beg to differ.
During holidays (especially during summer) it can be easy to graze on foods all day long and then top it all off with a main course. (Cue your Monday morning “Um, O.M.G. where did that muffin top come from?”) I have read that experts say you are more likely to consume twice as much food during meals/snacks with family or friends than you are alone. It’s best to be prepared, which is why I packed some eats for the beach this past weekend!
In these tupperwares held:
- 7 pieces of diced bacon
- 1 large salad w/oil, vinegar, balsamic (unpictured)
- 3 turkey sausage links
- diced strawberries/oranges
- 3 cups mushroom/pepper/onion quinoa w/flax
Before embarking on our beach adventure, I also spotted these little dandies in Whole Foods. (I truly am blessed to be able to eat most of my breakfasts here with my boyfriend.) Is this Luna flavor new? I’ve honestly never seen it around before.
^^^Oh and that on the right is a new definitely HFCS loaded Chewy Smash Bar. You forget I also tan on the beach, which isn’t healthy. (It’s all in moderation!)
Ok, clearly I am a beast at the beach. (in reference to the appetite) We picked this up because I actually believed we WOULD NOT have enough food!
These were some basics I whipped up during the week:
- Chocolate Protein Pudding w/raspberries
- Avocado, Cucumber, Strawberry, Onion Salad with sea salt and EVOO
- Plain Hummus w/basil garnish
- Tuna salad made with Chobani
- Omelet (even though I love spelling it omelette) with chunks of mozz and cheddar
Snack Attack: Banana w/orange and flax
One last discovery: Anna’s Ginger Thins
I am obviously on a gingerbread kick. First biscoff/cookie butter and now these! I used these over my breakfasts, salads, and a smoothie I made.
A meal out: This barbacoa (steak) salad was courtesy of The Taco Truck. (Hoboken location) There was also cotija cheese, tomatoes, avocado, and mixed greens sitting under that behemoth mound of meat.
The Taco Truck is freakin’ amazing and they are one of the only chain restaurants that is LEED certified. TWO THUMBS UP!
