Goodness of My Heart- Cookies & Mini Muffins

You know what scares me? Machines. The other day I realized we not only have machines controlling our money, but our minds too. There’s the self-checkout, automated bill pay, SIRI, brainy vacuums, and even preliminary surgical machines overtaking the ER! What if one day i-robot actually becomes a reality? That will be Will Smith’s testament to humanity.

All of these Hollywood films within the past few years are very suggestive. When you take a trip to the movies, you generally aren’t there for a non-fiction flick. You go for the drama, effects, or laughter.  You seek to escape to a world unparallel to your own current reality. (albeit- happy or sad) However- lately- I’ve been getting the eerie sense (call it my intense paranoia), that some of these movies could probably happen in real life…tomorrow. I’m hoping a personal governmental vendetta isn’t the case…but with the way this country has been tanking running, scenes from Apocalypse NOW fused with I-Robot is all that enthrones my mind.

So just what got me on this rant? Baking. I was looking around the kitchen at all the machines we use on a daily to make the process of cooking a bit easier. You have the electric mixer, (which left unattended really does have a mind of its own), blender, slow cooker, pasta maker, (if you’re lucky enough) and blowtorch (if you’re wise enough). These are just some of the many tools that exist in the kitchen to create our modern day dishes. They could also qualify as the ingredients for another doomsday Hollywood film. But, I’m hoping My Brave Little Toaster was able to wring Hollywood’s “combative kitchen appliances” side out.

All rants aside, this week I went on a mini muffin frenzy. Muffins up to my ears. I created three different types for the local church.

First– Love Grown Foods granola mini muffins. I used Raisin Almond Crunch combined with Simply Oats. Then added basics like flour, sugar, milk, and eggs. Popped in the oven for 15 minutes and voila!

Second batch involved chocolate and vanilla filling. THis came from “In Da Middles” box, and I quickly learned the next morning that my own personal middle wasn’t exempt. (I am a muffin monster!)

The third batch I made consisted of carrot cake and cream cheese filling. These were kind of bland, but I also attribute it to my tastebuds only being able to rate chocolate goods and nothing else.

Finally…some variety happened with these oatmeal raisin cookies. I used Love Grown Foods simply oats granola, raisins, vanilla sugar, oats, flour, cinnamon, milk, egg whites, and brown sugar. These weren’t half bad either!

PS- Do any of you have any suggestions as to what I should make for a church bake sale? I’ll be the only one selling…so I guess that is an advantage…but still poses A LOT of pressure. Must. Taste. Delicious. Thanks!!

  1. Aaaahhh! No measurements?!?! You’re just like me! Okay…so in order to reproduce your oatmeal raisin cookies, I’ll need to experiment I see…

      I know…I blame it on Bethenny Frankel (one of my kitchen inspirations). She NEVER measures- just eyeballs. (except for her books) I usually taste test- which can get you into a whole lotta trouble if it ends up tasting too good.
