I was feeling lackadaisical last week for most of my “greens” pictures, but I swear on my first grade teacher, I ate them.
To be honest, I cannot go a day without greens. It’s very similar to Romeo and no Juliet, bread without butter, or Tom Hanks in Cast Away without “Wilson”.
I was a typical kid who made faces at anything that wasn’t fruity or dancing raisins, but over the years I’ve learned to love the leafy stuff too.
So when I heard this month was another greens challenge, I got excited!
Ok, so here’s a measly looking salad I construed. It wasn’t excellent and wasn’t bland, it was just your average.
Next- a pepper, broccoli, and onion medley salad on a bed of romaine lettuce. It too, was mediocre.
This last thing…it’s not a creature from the green lagoon, a fake boob, or even a leftover St. Patty’s Day treat… It’s a mug cake!
I’ve been hearing wonderful things about baked cake’s cousin and figured I had to try it out. I used She Rocks Fitness recipe: spinach, 1 egg, vanilla extract, peanut butter, cinnamon, baking powder, whole wheat flour, milk, and a banana. 4 minutes in the microwave and you have this little guy- who is cute and good for you too!
Then, this past weekend, I took a trip to a place I’ve been wanting to for what seemed like eons. It’s randomly located on a hick road in the middle of nowhere…and it’s Mexican, so you can kind of see why one would be skeptical of its performance.
…But I’m pretty sure if you say sangria, nothing else matters. This place- Riviera Maya- had super cute decor and was AUTHENTIC mexican cuisine. Do you know how rare it is to find around where I live?
So yes…sangria, sangria….my mother was 2 sheets to the wind after having 4 glasses and a complimentary shot of caddy 43.
Enchiladas and taco salads for the main dishes…sorry no pics! Tipsy had set in by that point…
Last but not least…we have a little re-kindling with my good fall friend, pumpkin. This pumpkin chai tea is delish and that oatmeal is PB-coconut-banana topped with some chocolate chips! Devoured in 30 seconds flat. Literally.
And oh yeah, this sample of Naturebox dried bing cherries has been serving as my sweet tooth solace!
I saw these cuties in my local Shoprite…anyone tried them? I want ’em!
What’s your favorite way to incorporate greens into your diet? Do you season your veggies? I usually just use dressings because I’m so spice picky!
