This was supposed to be scheduled for last Friday, however Foodie Pen Pals is like a breaking news story, so sorry for the delay…
Last week, I think I tripled my time in the kitchen. I had a few recipe fails- due to gross substitutions I made.
My successes included the following:
1. Bethenny Frankel’s Low Fat Moist Brownies– I called them brownie cakes, because they were half cupcake, half brownie by the time I got through with them.
Ingredients: (I guesstimated measurements, sorry I’ve adopted that from Bethenny too!) *I omitted the ricotta and oil, since I didn’t have those available*
Yields: 12
Rolled Oats
Melted margarine
Cocoa powder
1 cup raw sugar (this is a def. measurement)- I would use agave next time to make it super sweet
1 tsp. vanilla extract
2 egg whites
1 cup fat free milk
2. Chocolate Banana Pudding w/ Brownie Bits-
*Pudding is in the two white bowls.
This was literally a package of Jell-O instant chocolate pudding mix and banana pudding mix mixed together. I used about 4 cups of cold milk, stirred for 5-6 minutes and then let chill in the fridge. I then topped the plates with brownie bits from the brownie cakes I made.
My recipe fails:
1. Chocolate Brownie Graham Flour Cookies– (I’ve said it before and I’ll say it again- just NOT a fan of flour…it makes everything WAYYYY salty and grainy. Ick.)
2. Chocolate Brownie Oat Cake– way too watery and too much cocoa powder.
The church actually had a backlog of all my prior goodies I made the week before, so I didn’t have to rush deliver anything. I kept the brownie cakes and pudding for myself. My sister actually gobbled the graham flour cookies- at least they weren’t a waste!
Plans for next week will include doughnuts (w/o glaze) and possibly a granola- for extra long keeping.
