Goodness of My Heart- 1st Edition: Strawberry Cake Tops/Pudding Cake

Let’s get ready to…BAKE!

Recently, I have partnered with my local church to prepare baked goods with a healthy twist for the food pantry. I figure here is the ideal place to begin my nutrition for life endeavors.

Many of those who come seeking assistance from the food pantry are in dire need of not only food, but good food and education. Here’s where I come in

I’m going to be providing one – two baked goods per week with a healthier feel and also host a meeting or two on the benefits of living a healthy, positive lifestyle. Since many of these people are in dire straights, it’s necessary they rediscover the right path, “nature’s path” to set them back on track.

Goodness of My Heart will feature updates every week on progress at the food pantry and of course- the recipes and lots of food porn pictures!

So here we go…for this week, I told you all earlier in my #WIAW feature I baked strawberry chocolate chip cake tops, which were a bit healthier because I used only one egg instead of three and no oil. (applesauce instead) And the best part is…they taste even batter…(better) and don’t leave a greasy mess on your hands! I’ll find out the verdict next Tuesday on if people liked ’em!

My mother also leads a bible study on Thursday nights, so I cooked this up. (Definitely not “healthified” by any means, but it’s still a new recipe creation of mine!)

Oreo Cookies -n- Cream Chocolate Pudding Cake

1 Jell-O Cookies-n-Cream Pudding Mix

1 box Duncan Hines Devil’s Food Cake Mix

1 Egg

2.5 cups Milk

  • Preheat oven to 325.
  • Mix egg and cake mix together first in one bowl.
  • Mix milk and pudding mix in separate bowl.
  • Pour pudding mix into cake mix and blend/stir until smooth.
  • Pop in the oven for 35-40 minutes.
