Mini Birthday Cake Protein Pancakes

If the word “birthday” lured you into reading further, my job is done. It’s not my birthday nor anyone else’s that I know of at the moment, but I was sick of making boring breakfasts so I accidentally opened my dessert cabinet and suddenly was inspired. Thank You Betty Crocker!

The inspiration came in the form of a 8 by 6 inch box with the words Party Rainbow Chip emblazoned on the front. The picture alone was heralding me!

I began with a small batter consisting of:

    • Few spoonfuls of party rainbow chip mix
    • 1/2 sample packet of Sunwarrior vanilla protein powder
    • Few pinches of flax seed
    • Egg Whites
    • Cinnamon Puffins

Then, I mixed and I whisked for about 2 minutes. Poured into the pan, and voila! (kind of wish I had thought to use my heart shaped cookie cutters for more of a worthwhile theme-but these were still delish nonetheless!)

And last but not least…let’s not forget the luscious toppings!
Peanut butter, Nutella, Plain Chobani, & Strawberries!

I may have to pretend it’s my birthday every day from this day forward.
