My FIRST What I Ate Wednesday. I consider this an accomplishment.
Let’s start with breakfast this morning which consisted of Overnight Oats.
Ingredients:
- 1 cup vanilla coconut milk
- 1 tbsp. flax seed
- 1/2 cup rolled oats
- 1/2 banana
- 10 chocolate chip morsels
- 1 tsp. light brown sugar
- 1 tbsp. peanut butter (mixed in the morning)
Super delish- and paired with a limited edition Golden French Toast cup of Keurig coffee! Absolute heaven.
Lunch:
Hot Banana Pepper Organic Beef Salad
This was easy to whip up and it’s basically a crushed up beef patty over top. Pressed for time today. I used a little bit of the banana pepper juice (mostly vinegar and water) as the dressing over top. Quite tasty!
Dinner:
Spicy Pull-Apart Chicken
I am proud to announce I have popped my slow cooking cherry! Since I’m all about motivation on Mondays, I took my own dose of medicine and dabbled with my mini slow cooker. These are the fantastic results:
Ingredients:
- 2-4 thin sliced chicken breasts (or thighs)
- 1 tsp. mustard
- 1 tsp. honey
- 1 tbsp. paprika
- Worcestershire sauce (if you have it)- I didn’t
- 1/2 can of organic four cheese pasta sauce
- sea salt
- 1/2 diced yellow onion
- dash of pepper
- 2 tbsp. vinegar
- 1 basil leaf
I put all the ingredients in, stirred for about 4-5 minutes, and then threw in the chicken. Came back in 4.5 hours assuming something must have gone wrong but was thrown for a loop. Not too spicy, just enough flavor, and melt in your mouth chicken!
Here’s how I plan to wind my wednesday down: Mint. Used for mint infusion tea. The price is right too at only $3 for a huge stockpile. (This will last me for two weeks!)

This totally went on in my kitchen today. Created more mess than the Clinton-Lewinsky scandal! Shockingly, only a blender was involved so the opposite should have occurred…
