Ok, so as much as I try to deny it, chickpeas are one of my favorite meal inclusives. I go through phases like most people, but chickpeas are my “ride or die”.
I was contemplating what to make for lunch (as I tried to veer away from the chickpea path) and came up with a measly bowl of cereal or a grilled chicken salad. So black and white, Mrs. Beaver boring. I glanced across the kitchen in the middle of me analyzing my economic woes, and noticed my mini food processor.
You can guess what happened next…chickpeas, sesame seeds, lemon, basil, sea salt, olive oil went into that baby. Did I think I would fail and lunch would end up filling the garbage can? Yes…because I have made hummus before and failed miserably. With a little tweaking and wishful thinking, I pressed the chop and then grind buttons, added in some water and voila!…pure bowl of perfection.
I paired the hummus with pita rice crackers and a bowl of my broccoli-carrot-kale soup from yesterday’s post.
After inhaling both in less than 5 minutes, my sweet tooth started acting up. I had time and energy to burn…so why not use up my Purely Elizabeth cookie mixes?
Love her mixes because they two different types of flour (millet/almond), chia seeds, and hemp seeds. Oober healthy! Plus- all the obvious stuff like chocolate chips, evaporated cane juice, cocoa butter, cinnamon…
All you have to add to this mix is oil, applesauce, and vanilla extract. Made the cookies quite bite-size, so I ended up with 36 rather than 24 cookies. But hey, I’m a frugalista sweets lover, so this is NOT a complaint.
